Since he was young, Chef Sim always had a deep interest in food and cooking. Although he didn't attend culinary school, he's opened himself up to growth, learning from every experience he can along the way, and continues to today. His culinary journey began when he started working with Chef Tom Colicchio at Craft.
After gaining experience in his kitchen, he moved on to work with James Beard Award-winning Chef Marco Canora at Hearth. Eventually, he made his way back to Manhattan (don't we all?), where he began to really push his career to the next level, serving as Executive Sous Chef under Chef Joe. He's passionate about working with the best seasonal produce from local Tri-State farmers and purveyors, and bringing those ingredients to your plates.
Rolling your pasta, gutting your fish, grilling your steaks. There's nothing Chef Sim can't do in the kitchen, and all with a cheeky smile and friendly banter. Most of the time.
